What is an exhaust hood?
An exhaust hood is a system that removes airborne grease, combustion products, fumes, smoke, heat and steam from the air created by cooking equipment. The hood systems use a filtration system to help capture the airborne grease (in what is commonly referred to as the grease trap) and other particles in the air before expelling them out of the building. The hood system then replaces the expelled air with clean fresh air creating a safe working environment.
Types of Hoods

Type I
Type I hoods are used for any type of cooking that produces grease. This includes fryers, grills, charbroilers and flattops but is not limited to only these pieces of equipment.
Type II
Type II hoods are used for heat and steam only. Situations that would use a Type II hood would be the use of only a dishwasher or some baking systems.
